Lentil Dal
Ingredients
- 2 Tbsp coconut oil
- 1 serrano pepper
- 1 Tbsp minced fresh ginger
- 1 shallot, thinly sliced
- 3 cloves garlic, minced
- 4 Tbsp green curry paste
- 2 1/4 cups light coconut milk
- 1 tsp ground turmeric
- 1 tsp curry powder
- Salt and pepper to taste
- 1 cup green lentils, well rinsed and drained
- 1 tsp soy sauce
- 1-2 Tbsp maple syrup
- 1-2 lemons juiced (about 2 Tbsp)
- Pinch of cayenne pepper for extra heat
- Rice for serving
Instructions
- Heat a large pot over medium heat. Once hot add coconut oil, serrano pepper, ginger, shallot, and garlic. Saute for 3-4 minutes.
- Add curry paste and stir to coat. Continue sauteing for 2-3 minutes.
- Add coconut milk, turmeric, curry powder, salt and pepper. Stir to combine and bring to a simmer.
- Add lentils, soy sauce, maple syrup, and lemon juice. Stir to combine. Bring back to a simmer for 15-20 minutes or until lentils are tender.
- Adjust seasoning to taste and serve over rice with naan.
