Lentil Dal

Ingredients

  • 2 Tbsp coconut oil
  • 1 serrano pepper
  • 1 Tbsp minced fresh ginger
  • 1 shallot, thinly sliced
  • 3 cloves garlic, minced
  • 4 Tbsp green curry paste
  • 2 1/4 cups light coconut milk
  • 1 tsp ground turmeric
  • 1 tsp curry powder
  • Salt and pepper to taste
  • 1 cup green lentils, well rinsed and drained
  • 1 tsp soy sauce
  • 1-2 Tbsp maple syrup
  • 1-2 lemons juiced (about 2 Tbsp)
  • Pinch of cayenne pepper for extra heat
  • Rice for serving

Instructions

  1. Heat a large pot over medium heat. Once hot add coconut oil, serrano pepper, ginger, shallot, and garlic. Saute for 3-4 minutes.
  2. Add curry paste and stir to coat. Continue sauteing for 2-3 minutes.
  3. Add coconut milk, turmeric, curry powder, salt and pepper. Stir to combine and bring to a simmer.
  4. Add lentils, soy sauce, maple syrup, and lemon juice. Stir to combine. Bring back to a simmer for 15-20 minutes or until lentils are tender.
  5. Adjust seasoning to taste and serve over rice with naan.
